  1. 8:00 PM

    Doors, and the bougie bubbly

    The first hour is champagne. Only champagne. Walk in, take a glass, find the people you have not seen since Croatia. Start the night classy. It does not stay that way.

  2. 9:00 PM

    The full bar opens

    Specialty cocktails, top shelf pours, wine, beer, and every classic you can name. From here it does not close again.

  3. 12:00 AM

    Midnight is the peak

    Last year the floor went off right around twelve and nobody looked at their phone again. Plan your night around being in the room for it.

  4. 1:00 AM

    Last drink, then the lights

    The final pour goes out at 1 AM and that is the night. What happens after that is between you and New York.

Ajay Singh came to Croatia this summer as a guest. On pirate ship day he asked if he could take the booth for a few songs, then turned a boat full of people who had met three days earlier into the kind of dance floor you tell your friends about for a year. He never gave the booth back. We offered him the gala before we docked.
